Curries

We had Indian food tonight, on account of having purchased some great white eggplant (eggplants?).

The light curry is chicken, and the yellow is lentils (amazing) and the one in the middle is eggplant, all served with rice.

Generally, when making Indian food, you want at least one wet dish and one dry, to balance each other. You can also balance spicy and mild, and rich and whatever the opposite of rich is.
